The milk used for its production does not have any kind of heat treatment. This provides a wide range of tastes and smell nuances typical of the vegetation from La Mancha. Its taste shows such particular and differentiated touches that it becomes an unmistakable cheese which, merged with the traditional flavors of organic livestock, make it completely unique.
Semicured Manchego cheese with Designation of Origin produced with raw milk from an organic livestock, in which milk quality, richness, fruitiness and aroma depend, to a great extent, on the selected natural grazing where sheep are fed. It is a pressed cheese of a firm paste with a 3-6 month curing period. It has an ivory-white color paste, buttery consistency and an intense and nice taste in the mouth. Thanks to its organic origin, this Manchego cheese is produced with the highest possible degree of respect for the environment and animals’ wellness.
