Our inimitable cured raw milk Manchego cheese with Designation of Origin is produced in the region of La Mancha from sheep’s raw milk from the Manchega breed. It has a 6 months minimum curing period and its milk comes from farms which are registered in the Designation of Origin of La Mancha. For its authorization and subsequent commercialization, it must satisfy certain physicochemical, microbiological and organoleptic conditions.
Manchego raw milk cheese is much more than just a cheese; it is the real expression of one of the best traditions of La Mancha. It is an art, a culture and a heritage. A flavor burst, only suitable for those palates which want the exception. Intense, spicy, powerful, of a firm paste and ivory color, it may have unequally distributed small eyes on the inside.
