Our wonderful cured Manchego cheese with Designation of Origin is produced in the region of La Mancha from pasteurized sheep’s milk from the Manchega breed. It has a 6 months minimum curing period and its milk comes from farms which are registered in the Designation of Origin of La Mancha. For its authorization and subsequent commercialization, cheese must satisfy certain physicochemical, microbiological and organoleptic conditions.
If there are three symbols which characterize La Mancha, these are Don Quixote, wine and cured Manchego cheese and, if it has Designation of Origin, it is even better. In cured Manchego Cheese, flavor gets more acid, less buttery and slightly spicy, possibly with unequally distributed small eyes. Of a firm paste and an almost ivory color, this variety stands out for its intense taste on the palate.
