Its high ripening period and the milk used in its production, which is not subjected to any kind of heat treatment, provide a very special variety of flavors and nuances. On the palate it is possible to perceive particular and different touches which, together with the traditional reminiscences given by the organic livestock, make of this Manchego a very special cheese.
Cured Manchego cheese with Designation of Origin produced with raw milk from an organic livestock, in which milk quality, richness, fruitiness and aroma depend, to a great extent, on the selected natural grazing where sheep are fed. It is a pressed cheese of a firm paste with a minimum 6 month curing period. It has an ivory color paste and a very intense, strong and somewhat spicy flavor; it can have small eyes unequally distributed on the inside. Thanks to its organic origin, this Manchego cheese is produced with the highest possible degree of respect for the environment and animals’ wellness.
