Blue cheese made from cow and goat’s pasteurized milk. This cheese has a sticky natural rind. The paste is closed with a soft texture with blue-green mould. It has a typical strong, persistent flavor and it is aromatic and buttery on the palate with sharp and saline touches. Keep in dark, cool, dry and ventilated places so that it does not dry out. If it is kept in the refrigerator, it should be taken out an hour before consuming.
This exquisite gluten free cheese is wrapped in natural maple tree leaves. This technique to wrap the cheese was used formerly since, in order to come down to the town from the caves, cheese makers packed them into the leaves of the trees so that the baskets did not get dirty. It is delicious when served with quince paste, Serrano ham, red paprika, black olives and olive oil tortas with fine herbs. Valdeon cheese, as well as the rest of blue cheeses, is an important source of calcium, Vitamin D and B5, proteins and minerals (sodium and zinc).
