Description

Cured cheese made with raw sheep milk and matured in cellar from 3 months. It has a maturation period between 7 and 9 months. Its rind is natural and it is covered with extra virgin olive oil. It has a firm and compact texture, with eyes of unequal size distributed inside. Its flavor is intense and persistent, and has very pleasant vegetable aromas. It is ideal to drink it with red wine or with a good handmade bread.
