Liquid spring virgin salt, from the underground springs of the ancient sea of Keuper, also called Tethys Sea (Triassic period). It is extracted in crystallization pools located in the natural landscapes of Jaén (Spain). Presented in a novel and original way, it has the same properties as salt in grain or flake. It is elaborated in an artisanal way, with decanting processes that make the liquid salt the purest, rich in minerals and trace elements. The salt, except medical indications against, is necessary for the organism and with this innovative format will be necessary less amount of salt to enhance the flavor of the food. It has multiple culinary uses, among them, it is worth mentioning the dressing of salads, vegetables, meats and fish.
The spring salt mines from which these unique salts come are the only Iberian salt mines that have survived to this day. This has been thanks to a salt generation tradition that has been passed from parents to children and that has remained unchanged in its artisanal production system, sustainable and respectful with the environment. Salt-making masters from Don Diego salt mines have worked for generations in the management and maintenance of the intangible heritage of the interior salt mines.
