The essence of flower of salt is a delicate spring salt, salty essence obtained from the surface of our salt mines and which reaches our plates in the form of white salt, bright and with a sweet and salty flavor. Only the sun, rain and wind are responsible for the creation of this essence of salt crystal. From the ancient Keuper Sea, also called Tethys Sea (Triassic period), it is formed in crystallization pools located in the natural areas of Jaén (Spain) and contains 84% sodium chloride, which is the base of the salt.. The rest are minerals and oligoelements that are present in their natural form, so they are not added. The essence of salt flower can accompany meats, fish, vegetables and salads. Wake up in the mouth flavors of nature and tradition.

The spring salt mines from which these unique salts come are the only Iberian salt mines that have survived to this day. This has been thanks to a salt generation tradition that has been passed from parents to children and that has remained unchanged in its artisanal production system, sustainable and respectful with the environment. Salt-making masters from Don Diego salt mines have worked for generations in the management and maintenance of the intangible heritage of the interior salt mines.
