Ham from Iberian pigs raised in freedom in the pastures of the Pedroches Valley and fed in their last months exclusively on acorns (9-10 kg. daily) and grass. Each piece is numbered, which ensures perfect monitoring and control of the curing process, which never takes less than 3 years. The curing process is achieved through a very slow maturation in a natural drying room and a subsequent rest in a natural cellar, located 5 meters underground, to achieve the optimum humidity and temperature parameters.
