Description

Our rosemary sheep cheese is made from pasteurized sheep milk, with low-medium salty intensity. It is a pressed paste cheese, obtained by coagulation predominantly enzymatic. The minimum maturation time required is 6 months. After being prepared, and after a short period of airing, it is covered with selected rosemary leaves. When mature, it acquires the flavour and aroma of this aromatic plant. It is presents a paste that, in the cut, is pale golden colour with medium size eyes and a smell of slightly evolved milk. By its peculiar matured, the cheese acquires a pleasant aroma of rosemary.

 

Following the most ancient traditions of the Sierra de Albarracín, our rosemary sheep cheese is made only with fresh sheep milk, obtained exclusively of own livestock from a small artisan cheese factory. The whole manufacturing process is controlled under the strictest guidelines regarding nutrition and hygiene, developing in perfect harmony the more traditional artisan methods with the latest technology advances.
