This pure sheep cheese with fine herbs is born of a small and traditional cattle farm in Toledo. This cheese is made from raw milk and it has a curing period of about ten months; its rind is coated with lard and fine herbs such as thyme, rosemary, basil and peppermint. This combination gives it an intense flavor, which is accompanied by the aromatic reminiscences characteristic of the herbs and the lard that cover it during its ripening. Its paste has an appealing ivory color and a firm texture. On the palate, very particular and differentiated touches, typical of the traditional taste of cheeses from La Mancha, are perceivable.
The milk used in the production of this sheep cheese with fine herbs, conveys an incomparable and authentic taste to it, as a result of the traditional production process of cheeses in La Mancha. It is in this region where the origin of this ancient tradition of shepherds devoted to the production of cheese is found.
