Description

In the area of influence of Cabañeros National Park, Quesos Cabañeros was born, a family business with more than 20 years of experience, dedicated to the manufacture of pure sheep cheese with milk from its own livestock. From his well-taken care of livestock a raw material of excellent quality is obtained, with which they elaborate his precious cheese.

The Cabañeros cheese cured in oil is obtained from raw sheep's milk through a completely handmade manufacturing process. It has a minimum maturity of 5 months and, during the maturation, extra virgin olive oil is applied to the cheese. The last 2 months of maturation, the cheese is matured in extra virgin olive oil, which gives it a unique flavor and aroma. When cut, a very intense ivory color is observed, with eyes of different sizes. Its smell is pleasant, typical of raw milk cheeses, it has an intense and slightly spicy flavor, reminiscent of extra virgin olive oil, and its texture is soft and compact.
