In ancient Greece, cheeses were considered a privilege given to men by the god Aristeo. At the present time, although it may seem crazy, it is certainly comprehensible that these first civilizations gave such divine connotation to cheese, even more if we take into account some of the cheeses that we can find in the Spanish gastronomy, such as this goat cheese which is so special.
‘Como una cabra’ cheese is produced with pasteurized goat’s milk from the Asturian pastures. It is a semi cured cheese made through enzymatic coagulation. Its flavor is soft, creamy, pleasant when beating and with spicy touches because of ripening, which is not very long. It is a very balanced cheese in terms of acidity and salinity. It has cylindrical shape, elastic texture and compact when cut. It is not very aromatic, although it has clear notes of the milk which it is made with. It is perfect as an appetizer, with a good red wine or as a traditional dessert with honey or quince paste.
