Cheese made from sheep's milk in slow pasteurization with crocanti almonds in the pasta. Cylindrical shape with well defined flower and pleita. Semi-cured cheese with 60 days of maturation. Yellowish cut with slightly darker pieces of the crunchy almond, almost blind or with very few eyes. Somewhat creamy texture with crunchy touches of almonds. Typical flavor of sheep cheese with sweet nuances provided by the crocanti almond.
