Pressed pasta cheese made with pasteurized La Mancha breed sheep's milk and a minimum maturation of 10 months. It has a cylindrical shape and practically flat faces. When cut, it has small, unevenly distributed eyes and an ivory-yellowish color. Its texture is medium elastic, buttery and somewhat mealy. It has a slightly spicy, strong and tasty flavor with a pleasant and peculiar aftertaste typical of La Mancha sheep's milk. The Halal certificate that it possesses gives it an extra quality, based on sustainable development and ethical treatment in all phases of production and marketing of Halal certified products.
