Cabrales PDO cheese has a bluish-green color, its paste is creamy and it has a strong smell. Its flavor is slightly spicy, balanced and intense and it barely has rind. Is a blue cheese produced in Asturias (Spain), from cow’s raw milk or from the blend of 2 or 3 different kinds of milk: cow, goat or sheep. It is protected under the Designation of Origin since 1.981. The milk used for its production is exclusively obtained from the flocks registered in the Designation of Origin; from cattle fed with grasses from the Picos de Europa Mountains.
Once the cheese is produced, it is taken to the natural caves of the mountains for about 3 or 4 months where it ripens. In these caves, the humidity level is 90% and the temperature is about 10ºC, which favors the development of its characteristic moulds during the ripening period.

A mouth lingering strong but unforgettable flavour and creaminess which almost is on a par with my favourite English Stilton cheese. Slightly stronger than Stilton but the satisfaction level is similar. Bravo!
