It is said that eating nuts regularly is a life insurance because of their high amount of benefits for health. Nuts are one of the most complete, energetic and rich in nutrients and minerals foodstuffs and, moreover, they are really tasty. What else can we ask for?

Today we are going to tell you a new way of eating nuts; instead of eating a handful of pistachios, almonds, walnuts, etc. we are going to replace it by a portion of nuts cake. You will love it!

Ingredients for the Pastry:

  • 250 g of flour
  • 4 spoonfuls of sugar
  • 150 g of butter
  • 1 teaspoon of vanilla essence
  • 2 egg yolks
  • Dried fruits such as figs, prunes, apricots and raisins to decorate

Ingredients for the stuffing:

  • 150 g of walnuts
  • 150 g of almonds
  • 150 g of raspberry jam
  • ½ cup of sugar
  • 1 cup of water

Preparation:

Put the sieved flour into a bowl and add the two egg yolks, the sugar, the vanilla essence and the butter at room temperature. Mix everything until you get a homogeneous pastry. There is no need to knead it too much.

In order to prepare the stuffing, the first thing to prepare is the syrup with sugar and water. To do this, put the water into a casserole and dissolve the sugar, warm over medium heat stirring constantly so that it does not caramelize. Cook it for about 15 or 20 minutes until it thickens.

Once the syrup is ready, remove it from the heat, add the almonds and the chopped nuts and mix it well.

Prepare a container for the cake and cover its bottom with raspberry jam, add the dried fruits that you prefer: figs, raisins, apricots…and, over this layer, pour three quarters of the pastry. Then, add the stuffing that you have prepared with the syrup and cover it with the rest of the pastry.

Bake it for about 40 minutes at a medium heat, let it cool and enjoy it!
